In checking my spelling of Velveeta just now, I discover a recipe for Velveeta Jell-O.

That's melted cheese made newly squiggly in unflavored gelatin cubes. It beckons on a fork.

Cheese-flavored Jell-O.

Take me now, Lord.

Originally Velveeta was made from real cheese. Today, it's mainly whey protein concentrate, milk protein concentrate, milk, fat, and preservatives. That's not real cheese—which is why the FDA forced Kraft to change its label from "cheese spread" to "cheese product."
